Cauliflower Arancini Balls

This feels like a real high carb treat, just without the rice! A great picnic staple.

Servings: 1 portion = 3 balls

INGREDIENTS

3 Heck chicken sausages / veggie sausages

1 egg white beaten, medium

15g Breadcrumbs

100g Cauliflower rice cooked (blended cauliflower, microwave covered for 3-4 minutes)

20g Low fat cheese

1 tblsp Balsamic vinegar

METHOD

1. Mix the filling from the sausages, the cauliflower, the cheese and the egg white in a bowl.

2. Mould into 3 balls and roll in the breadcrumbs.

3. Spray with 1 cal spray.

5. Cook in a preheated oven at 200 for approx. 15 minutes until the sausage meat is cooked, or alternatively pop it in an air fryer for about 14 minutes turning occasionally.

6. Serve with mixed leaves and balsamic vinegar.
