East Italian Traybake
Makes 4 portions
4 Medium Chicken Breasts
1 Large red onion, Quartered
2 Courgettes, cut into thick slices
1 Yellow Pepper, Quartered
1 Red Pepper, Quartered
100g Cherry Tomatoes
Glug Balsamic Vinegar
1 small ciabatta Loaf (about 300g)
Add the vegetables to a roasting dish and cover with the oil and balsamic.
Add the Chicken and Season.
Bake uncovered at about 180 for 20 minutes, or until the chicken and vegetables are just about cooked.
Chop the Loaf into slices and squeeze in between the veggies and chicken so it the bottom bit of each slice soaks up the juices.
Cook for a further 5-7 minutes until everything is cooked and the bread is crispy and serve.
