Melting Meatballs & Pasta
90g cooked pasta
120g lean beef mince
1 garlic clove
½ grated courgette
½ yellow pepper, chopped into small cubes
25g reduced fat cheese, cut into small cubes
1tsp smoked paprika
100g mixed baby tomatoes, halved
1. Mix the meat with the grated courgette, pepper, salt and pepper, and paprika and loosely form into meatballs, making sure they are not too loose but also not too tight.
2. Carefully push the feta in the middle of the meatballs and close the hole with the meat.
3. Put the meatballs and the chopped baby tomatoes in the oven for 15-20 minutes until cooked through.
4. When the meatballs are ready mash the baby tomatoes in a bowl with a little chopped fresh basil then top the pasta with the sauce and meatballs.
