Crumpet Pudding

1 Egg
1 Egg white
10g Chocolate spread
½tsp Vanilla extract
1.5 Crumpets
Dash skimmed milk


1. Toast the crumpet lightly, spread with chocolate spread and cut into quarters.
2. Whisk the egg, milk and vanilla extract together.
3. Pour the egg over the cut up crumpet in a small pie dish so its squashed in and bits of the crumpet are poking out.
4. Bake in the oven at about 180 degrees for 15-20 minutes until cooked.
5. Sprinkle with cinnamon/ stevia to flavour.
