Aubergine and Avacado Wraps

Serves 1

INGREDIANTS

1 Small Aubergine

70g Cooked Mushroom Microwave Rice

50g Sliced Halloumi

1/2 Avocado

1/2 Tsp Siracha

1 tbsp. Fat Free Yogurt

METHOD

  1. Slice the Aubergine into long wide slices and warm through, slightly colouring on a griddle pan or frying pan.

  2. Pop the Halloumi under a grill to cook through.

  3. Add the chopped Avocado to the cooked rice.

  4. Using the Aubergine as a wrap add the rice, Avocado Halloumi, a little yogurt mixed with siracha and wrap over.

This is a higher fat recipe but evened out by being low carb!
