The Spud of Dreams

I love a Jacket Potato, they have to be crispy though because that skin is the best bit!

This is my Luxurious Jacket Potato!

Serves 1

INGREDIANTS

1 Jacket Potato, about 100g raw weight

30g Philadelphia Light

3 Spring Onions, finely chopped

2 Reduced Fat Bacon Medallion slices

60g Chicken

1/2 Small onion, finely chopped

Green Leaves to Serve

METHOD

  1. Pre heat an oven to 200.

  2. Prick the Potato and wrap some wet Kitchen paper around it, pop it in the microwave for 6-8 Minutes until the potato is cooked through.

  3. Cut the potato in half and scoop out the middle.

  4. Mix half Philadelphia with the whites of the spring onion and the potato in a bowl. But the mixture back in the potato skin, then pop it in the oven.

  5. Finely slice the bacon and chicken and fry in a non stick frying pan with the onion until cooked through. While the mixture is hot add the Philadelphia and a touch of boiling water to loosen and stir together with salt and pepper.

  6. When the Potato has crisped up take it out and load on the chicken mix.
