Spanish Sweet Potato

This is a little higher than a normal balanced meal from The PHBP, the key to carbs and fats is balancing the so by reducing the carbs it means you can allow for more fats. This is best macro tracked but if your following the food plan its still 1C 1F 1P 1V as the calories from fat are balanced with the reduced carbs

Serves 2

INGREDIANTS

1 Sweet Potato, about 100g raw weight

35g Choritzo, chopped into small cubes

1 Green Pepper, chopped into small cubes

250g Fat Free Cottage Cheese

100g Spinach

METHOD

  1. Pre heat an oven to 200.

  2. Prick the Potato and wrap some wet Kitchen paper around it, pop it in the microwave for 6-8 Minutes until the potato is cooked through.

  3. Add he potato into the oven to crisp up.

  4. Pan fry the Choritzo and green pepper then when its cooked add the spinach and cook until it is wilted.

  5. Once the potato is nice and crispy take it out the oven and cut in two.

  6. Serve half the potato with half the mixture and pop the cottage cheese on top.
