Pizza Topped Chicken With American Style Sweet Potato Fries

Serves 2

INGREDIANTS

2 Chicken Breasts (about 200g per breast)

Tin Chopped Tomatoes

2 tbsp. Tomato Puree

1/2 tsp Dried Oregano

1 tsp Dried Basil

1 Onion, Chopped

6 Slices Pepperoni

30g Cheese

2 Small Sweet Potato (200g)

Fry Light

Choice topping for fries:

Mix Together-

1 tsp Garlic Salt

1 tsp Onion Powder

1 tsp Paprika

METHOD

  1. In a deep oven proof dish add the Tomatoes, Tomatoes puree, chopped Onions and herbs and mix them together.

  2. Add the chicken and cover with the sauce.

  3. Finely slice the sweet potato into fries, cover with fry light and the spice mix.

  4. Cook in a pre heated oven at 180.

  5. After 10 minutes Remove the chicken and divide the grated cheese on to the chicken breasts then add 3 slices of pepperoni on each.

  6. Increase the oven temp to 200, pop the dish back in the oven and give the chips a shuffle, cook for a further 10-15 minutes and until the chicken and chips are cooked through.

  7. Serve the Chicken with the chips and enjoy!
