Crusted Cod

INGREDIENTS

300g White potato cut into wedges
140g White fish fillet/ other protein equivalent
20g Breadcrumbs
2 tbsp Cajun spice
150g Cabbage

METHOD

  1. Roast the potatoes with 1 TBLSP cajun spices and 1 cal spray, par boil the cabbage for a few minutes.
  2. Mix the breadcrumbs with 2tsp cajun spice and put on top the fish, spray with 1 cal and put it in the oven at 180 for 15-20 minutes until cooked through and flaky.
  3. Finish the cabbage by pan frying it until cooked.

To add a fat option you could add chopped nuts to the breadcrumb mix for extra crunch.
