Maple and lime Chicken, Sweet potato and Sour Cream

Serves 1

INGREDIANTS

1 Small Sweet Potato (about 220G Raw Weight)

1 Lime

30ml Sour Cream

1 tsp Maple Syrup

80g Green leaves

1 Small Chicken Breast (about 220g)

METHOD

  1. Microwave the Sweet Potato for about 6 Minutes until soft then wack in a pre heated oven at 220 until crispy.

  2. Flatten or butterfly (slice, not all the way through) the chicken breast and mi in a bowl with the zest and half the juice of the lime, mix the rest of the juice with the sour cream.

  3. Once the potato is cooked start to pan fry your chicken using fry light, squish the potao down a little so its flatter into the pan with the chicken, turn the potato so it browns and cook the chicken until it is no longer pink in the middle.

  4. Serve the chicken and sweet potato on to a plate ontop of the sour cream and por the maple over the lot. Serve with a side salad! Delicious!
