Greek Chicken Tray Bake

Makes 4 portions

INGREDIANTS

4 Medium Chicken Breasts

1 Large red onion, Quartered

2 Courgettes, cut into thick slices

1 Yellow Pepper, Cut into thin slices

20 Cherry Tomatoes

1 Lemon

130g Reduced Fat Hummus

30 Green Olives (in brine)

Small Folded Flat Breads (about 100 calories)

METHOD

  1. Add the vegetables to a roasting dish and cover with Fry light.

  2. Add the Chicken to the tray and add 30g Hummus on top of each breast and spread so its even

  3. Bake uncovered at about 180 for 20 minutes, or until the chicken and vegetables are just about cooked.

  4. Squeeze the lemon juice over once cooked and Serve the Vegetables, Chicken and warmed flat breads in a big pasta bowl.
