Bananna and Raisin Muffins

Makes 12 muffins, 1 portion = 2 muffins


250g wholemeal self raising flour

1tsp ground cinnamon

1tsp bicarb of soda

100g peeled ripe banana mashed

75g raisins

250ml skimmed milk

3 medium egg whites

1tbsp golden sugar


1. Sift the dry ingredients into a bowl and mix together, add the mashed banana and milk and whisk until it is well mixed. Add the raisins and mix again. 

2. Whisk the egg whites until stiff peaks have formed.

3. Fold the egg whites into the dry bowl and carefully transfer into 12 muffin cases.

3. Cook in a pre heated oven at 190 degrees for about 15-20 minutes until golden brown.
