Mango, Coriander and Spicy Protein

260g Raw Protein/ Equivalent- Fish/ chicken/ tofu
160g Cooked quinoa
100g Mango chopped into small pieces
1 Handful of fresh coriander
1 Lemon
1 tbsp Cajun spices
3 tbsp 0% Greek Yogurt
15ml Olive oil
1 Vegetable stock cube.


  1. Mix the protein with 2 TBLSP yogurt, Lemon zest and cajun spices.
  2. Finely chop/ Blend the coriander, juice of the lemon and 15m olive oil together to make a salsa.
  3. Grill the protein and cook the quinoa as per the instructions but add the stock cube.
  4. Mix the sauce through the quinoa, add the mango and serve with the protein.

1 portion = 1C 1F 1P 1V
To fit 1C 1P minus the Oil and mix the coriander and lemon juice with the mango.
To fit HC HP Half portion and minus the Oil.
